Contrairement \u00e0 la pomme de terre qui conserve le sucre sous forme d&rsquo;amidon, le topinambour est riche en inuline.<\/p>\n<p>Sa saveur se rapproche de celle du c\u0153ur d&rsquo;artichaut ou des salsifis. Il se consomme g\u00e9n\u00e9ralement cuit refroidit en salade avec une vinaigrette, chaud en accompagnement, frit, en pur\u00e9e, revenu \u00e0 la po\u00eale&#8230;<\/p>\n<p>Sa forme le rend difficile \u00e0 \u00e9plucher.
