Le plus consomm\u00e9 est le fenouil cultiv\u00e9 qui forme un bulbe \u00e0 sa base.<\/p>\n<p>Il est riche en fibres, en vitamines (A, C, B9, E&#8230;), potassium, sodium et fer.<\/p>\n<p>On peut le consommer cru finement taill\u00e9, et certains aime tremper des lamelles de fenouil dans une sauce type aioli ou simplement mayonnaise. Chaud,\u00a0on l&rsquo;incorpore aux po\u00eal\u00e9es, soupes, pur\u00e9es. Il ajoute une touche anis\u00e9e aux plats et accompagne tr\u00e8s bien les viandes, poissons et fromages. On peut ainsi faire une <strong>tartiflette pomme de terre\/fenouil\/lardons<\/strong> ou encore une<strong> pur\u00e9e pomme de terre\/fenouil<\/strong>.<\/p>\n<p>Le bulbe est le plus souvent le seul \u00e0 \u00eatre consomm\u00e9, voire pr\u00e9sent\u00e9 sur les \u00e9tals. C&rsquo;est bien dommage car les feuilles et les tiges aromatisent tout aussi bien les plats.
